I have a few stretches of time in the coming season where I know I won’t be able to engage in regular training due to a family vacation (I’ll be able to run and hike but not bike or swim) and a minor surgery that’ll take a couple of weeks of recovery. What is the best way to plan around things like this in Athletica? Do you just skip all the planned workouts and let it adjust accordingly, or do you go unplanned and then start back up?

Generally with my athletes on Athletica, we just skip the planned workouts and let the program adjust. If there’s going to be time for runs and maybe some strength work, even if it’s bodyweight or yoga, I’ll add those into the days and delete the main workout.
Either way, the program will adjust to your workout schedule!

I just skip workouts. In my experience, when you get back in the proposed workouts might seem a little wonky (super long, etc) but adjust them to what you consider reasonable for the first couple of days and it snaps back into line quickly. (I’ll note that I’m older, humble, and not Kona-bound or anything, so your resilience to long workouts after a week off, experience and personality type might affect this last suggestion.)
