I am currently using the triathlon training plan, but I will be unable to swim or bike for 2 weeks while on vacation. Is there a way to change my overall week, so that instead of “Long Distance Mid Volume Build” I could have “Marathon Mid Volume Build”?

I think for your situation the best option would be to use the Workout Wizard tab you see on each of your sessions. Go to the ‘injury’ tab (pretend you have a shoulder issue I guess) for your swims and change those to a similar load in running. That should get you running sessions most days you are away.
